Microsoft 365 is cancelled through your Microsoft account, not inside Word or Outlook. The main thing to watch is your OneDrive storage: it drops to 5 GB when the subscription ends, and anything over that needs to be moved.
Microsoft 365 subscriptions are managed centrally in your Microsoft account, alongside Xbox Game Pass and other services. Cancelling turns off recurring billing; it does not delete your account or immediately remove access.
If you subscribed to Microsoft 365 through the Apple App Store or Google Play Store, Microsoft cannot cancel it for you. Cancel in the store where you subscribed:

The biggest practical issue when leaving Microsoft 365 is storage. Your OneDrive allowance drops from 1 TB to the free 5 GB when the subscription ends. If you are over 5 GB, Microsoft gives you a grace period - typically several months - during which you can view and download files, but you cannot add new files. After that, files may be deleted.
Installed Office apps do not uninstall themselves when the subscription ends, but they drop into reduced functionality mode. You can still open and view documents, but editing and creating new documents requires an active subscription or a one-time Office purchase.
Microsoft generally does not offer refunds for monthly subscriptions. For annual plans, you may be eligible for a prorated refund if you cancel shortly after renewal and have not used the service. Contact Microsoft Support to request one.
